When talking about wine (and Cavistes...), we are often tempted to make a direct link between age and quality. Thus, when asked, most people would prefer to drink old rather than young, but the bottles available for purchase are rarely older than our last car… So, how does one get started?
This workshop is therefore a first step toward understanding the principles of wine aging and will cover decanting, ‘carafage’, aeration, aging measurements, and other topics regarding wine ageism. To support our claims, we will open a few old and very old bottles from our Cavistes reserve.
Fans of tertiary aromas are welcome to join this magnificent tasting of old vintages.
Workshop-tasting price including wine, appetizers, and service: $134 + taxes.
Weekend tasting workshops generally last between two and a half and three hours. We present the subject matter during a half-hour of theory and then taste six dishes paired with six wines.
A few days before the workshop, a reminder email will be sent to you, and we ask that you let us know about any allergies or alternative dietary requirements in advance so that we can serve you better. It is important to communicate this information to us before the day of the workshop.

The tasting includes 6 wines, in styles that vary according to availability, accompanied by 6 matching dishes.

- Choose your workshop and the date and add it to your cart
- Validate with the L'ADDITION SVP button
- Enter your personal information
- On the right, enter the alphanumeric code from your gift certificate (received by email) in the DISCOUNT CODE space
- In the case of four-digit vouchers on white cardstock (old gift certificates), please repeat the process for each gift certificate and registration, as the system unfortunately only accepts one registration per certificate.
