VDF 'X Bubbles' NV

X Bulles is produced naturally using the ancestral method: the grape’s natural sugar ensures the start of fermentation, the formation of bubbles, and the preservation of residual sugars. Once harvested, the grapes undergo immediate pneumatic pressing. After a light settling period overnight, fermentation begins in temperature-controlled tanks, without the addition of exogenous yeasts. A light filtration during fermentation is followed by bottling, allowing for secondary fermentation in our cellars. Once the balance is achieved, the bottles are placed neck-down in preparation for disgorgement.
